Like a 'what car' thread - but with computers

Hi all,
I initially put this thread in the 'hobbies' area but I think it might be better placed/more swiftly answered here.
The reason I've reposted here is because I'm flying back to the UK tomorrow (I live in Cyprus) so any recommendations could be followed up in person rather than remotely.

I've read numerous 'What car should I buy...' threads on ph over the years, so I thought I'd try a computer version. I'm a bit fick when it comes to all this geeky stuff so please try to keep responses as jargon free as possible :-)
My requirements:
I need a new home computer, I have upgraded to a decent monitor, keyboard and mouse but the computer itself is now over 8 years old and is incredibly slow at opening applications and browsing. We use this machine predominantly for domestic correspondence, email, surfing and storing our photographs (the wife flatly refuses to store images online as she 'thinks' the integrity is insufficient - I wouldn't mind if there were any racy images, but there aren't). I don't do any gaming but my eldest is just getting on for 4 and he might want to start using some sort of learning software soonish.
I think my ideal solution is a laptop with docking station, so that we can continue to utilise the assets from the old system in the study, but have some portability too, which would be useful.
I could also be interested in a 3in1 Printer/Scanner/Fax thingy too - good enough for photo quality but hopefully doesn't take extortionately priced cartridges.
In addition, I do a fair bit of travelling with work and would find a 2nd, more robust, laptop useful (something that's difficult to destroy but doesn't weigh the same as an old Ford Granada). Ideally Wi-Fi enabled with a decent battery life.
Budget is a £1000 all in (is that realistic?). I don't pay UK VAT if that helps my budget go a little further.
Don't know where to even start looking, got my last computer from DELL because it was easy, this time I'd prefer to consider any suggestions then probably end up going with the easiest option again!
