Lemon Sorbet?
lemon juice
175g sugar
600ml water
1 egg white
- Dissolve sugar slowly in the water (add any lemon rind if you have it), then bring to the boil
- Let the syrupy mixture cool
- Add the lemon juice
- Put the mixture into a container and pop it in the freezer until its all slushy
- Beat the egg white until stiff and fold into the mixture
- Return the mixture to the freezer
