What to do with smoked salmon

Need to make dinner for two tonight, have some smoked salmon, just need ideas on what to do with it.

Needs to be reasonably quick.

Smoked salmon and lightly scrambled eggs.

Variation on prawn cocktail it to wrap your prawns in smoked salmon slice if you can make it funnel shaped even better, serve on a plate as opposed to a cocktail glass. You could add a soft-boiled egg to the equation bit a side salad, and a dressing of your choice.

Blinis topped with crème fraiche (mix in a little horseradish to lift) top with smoked salmon and finish with a little lump fish roe.

Make some pasta with a cream sauce, and mix in some strips of smoked salmon immediately before you serve.

IMHO smoked salmon unless cut really thickly should not be cooked.

Dill mayo, freshly ground black pepper and brown bread.

Add capers if you're feeling adventurous.

Little squares of toast (or blinis). Pop salmon on. Top with a blob of thick sour cream mixed with a tiny bit of chrain (Jewish beetroot and horseradish sauce). Top with sprigs of dill.

Looks and tastes great. thumbup

Good for breakfast in Eggs Benedict!

As an evening meal I'd probably go for the pasta/cream sauce/smoked salmon...

durum wheat pasta, cook it up

spanish onion/red onion, capers, squeeze of lemon juice. Cook it up a little bit, bit of olive oil through the pasta, then into a bowl, spoon the sauce over it, then chuck some sliced smoked salmon over the top.

Put it with Pasta or to fill savoury Pancakes. Mix it with some creme fraiche, chives and a bit of horseradish. Bung a few prawns in for bite if you've got them in the freezer.

I agree.

Smoked salmon "trimmings" are relatively cheap and good for the scrambled eggs trick...
