So Mrs Had Ham is nearly (see below) a veggie, we lived in Japan for a number of years, and Mabu Dofu is one of her favourite meals.

Tofu features large - along with chillies and minced pork. Probably the only the only place where Tofu is acceptable, methinks...

...you?

Where else is it acceptable?

Minced pork and aubergine casserole with tofu is one of my favourites at our local Chinese. Also, peppers stuffed with beancurd and prawn paste in black bean sauce.

It's just a texture and when understood, can be delicious.

yep - the bad thing with Tofu is when people try to use it as a meat substitute, not a food in its own right.

Fuscia Dunlop's cookbook "Land of Plenty" has the best Mapo Tofu recipe I have come across. You can probably find the recipe online by googling - its often reprinted in other newspapers etc.

I buy extra firm white tofu from the chinese supermarket and it works really well for this recipe.

If you steep firm white tofu in boiling water, then slice and dry it out, it deep fries really well too. Deep fry your tofu chunks, then stir-fry in a "sweet and sour" sauce made with black rice vinegar, sugar and soy sauce for a really nice bit of eating.
