I made this for the first time today and it was delicious. There's a lot of free wild food going begging at the moment, and it seems a shame not to make use of it:
Ingredients:
Colander full of nettle tops, washed
Large onion
Clove garlic (or wild garlic leaves)
Large potato
Butter
500ml chicken / vegetable stock
Single cream
Method:
Chop onion, garlic and potato and sweat in butter. Add nettle tops, stock and simmer until potato is soft. Blend. Add cream. Enjoy.
Nettle has a subtle flavour, a bit like spinach, but more delicate. Next I'm going to try the leaves in a Greek spanakopita

very quickly
