I made this for the first time today and it was delicious. There's a lot of free wild food going begging at the moment, and it seems a shame not to make use of it:

Ingredients:
Colander full of nettle tops, washed
Large onion
Clove garlic (or wild garlic leaves)
Large potato
Butter
500ml chicken / vegetable stock
Single cream

Method:
Chop onion, garlic and potato and sweat in butter. Add nettle tops, stock and simmer until potato is soft. Blend. Add cream. Enjoy. yum

Nettle has a subtle flavour, a bit like spinach, but more delicate. Next I'm going to try the leaves in a Greek spanakopita

Nettle wine also, gets you drunk very quickly

Feta and 'spinach' filo pie has also worked very well. yum

How in the name of all things spiky do you wash the nettles without stinging yourself? Horrible, bitey, nasty things frown

Wear rubber gloves when picking and preparing them. Once they're cooked there's no sting.
