To contest or not to contest?

Morning all,
The other day my girlfriend was driving down the motorway at 06.30hrs in the morning. She'd had trouble starting her car that morning hence was late and so was travelling at about 90mph (she thinks) down the M3.
The next thing was the flashing lights in the rear view mirror so she pulled over. The officers said that she was traveling at 110 mph, to which she replied my car doesn't go that fast (it's a 6 yr old Peugot 106 1.1 litre) to which they replied that they had to do 110 to catch her up. They said that they were going to let her off with 3 pts and a £60 fine.
At no point did they show her any video or timings with her speed read out. She wasn't sure if it was a traffic car or normal squad car. She just took the Fixed Penalty Notice which detailed Offence Code 134 Excess Speed On the Motorway and continued on her way.
My question is should she dispute this since they offered her no proof of her speed?
For them to claim that she was doing 110mph (she's adamant it was 90 max) and then for the Officers to back down and just say excess speed sounds to me as if they don't have any proof.
Has anybody got any advice?

Get a manufacturers brochure showing the top speed of the car.
Then stick that under their noses.
Also the fact that they "had to do 110 to catch up" thats neither here nor there.
If they were stationary (likely) then they could have accelerated to 220mph "just to catch up"...so what?
It dosent follow that the car your girlfriend was in was doing that speed.
Id go to court with this and give em a bloody nose...turkeys...
