Why oh why don't we make rillettes in this country?
In France, rillettes is available in any supermarket - it's a lovely lunch with crusty bread/a crunchy cornichon, and is tasty enough to convert even the most hardened pork hater.
Not as if the Brits don't raise pigs...
Grrr. Argghhh.

Rillettes is a preparation of meat similar to pâté. Originally made with pork, the meat is cubed or chopped, salted heavily and cooked slowly in fat until it is tender enough to be easily shredded, and then cooled with enough of the fat to form a paste. They are normally used as spread on bread or toast and served at room temperature.
so basically a chunky pate.
dont really like pate in the first place, well, I lie, I will eat it, just not go "ooh look pate I'll buy some of that"
