Thomas - your best bet is to go for something old that can be insured as a classic - run it as a fun car with limited mileage as a weekend toy - insured as a classic relatively speaking you'll pay peanuts.
I am an old fart now (41) but pay £140 a year for classic insurance on a V8 TVR - there's plenty of 20 ish year olds on the TVR forum that just can't believe how cheap it is to get into something totally mental performance wise under classic insurance.
My car is a TVR V8S by the way - you'll find me lurking on the TVR S Series forum, and my car has been by far more reliable than my wifes 2004 A4 convertible. Bloody thing.

A TVR is an experience, anything else is just a car. hehe

what age does it have to be to be classified as a classic?

I was 25 when I got a Jaguar XJ Sport.

Not mega fast, but I found that the insurance for big saloons was cheaper than for more traditional sporty cars.

I'm 20 and have just got a Lupo GTI..... Rather quick.

I also have a full race MGB GT, which I use on the road.

I think a definition of 'quick' is in order...

Aye, and why wait to go up such a huge step? Try some quickish cars in between, work your way up.

B5 S4 qualifies as quick in my book. and if you want to tuning, you can go nuts...

most of my cars hover closer to swift rather than quick...

Wooo! Get over to www.clublupo.co.uk.

Back on topic, it depends on what you call quick - sub 8 sec? Got my Lupo GTI at 21, quick enough for the moment, til I get some no claims back anyway

Was introduced to the RS2 at 22.

That for me redefined everything.

Triumph Spitfire at 11. Caterham R500 at 41. Both needed brown trousers.

When I was 27 got an S2 and the insurance was around £600, from then on it gets cheaper.

Only option is to go classic if you are less than 20.

Only other advice I would say is that sometimes the insurance is the same or cheaper for some performance cars eg:

My quote for 20v Quattro coupe (170bhp) was more than the same shape S2 (220bhp)
And
My quote for a S4 (265bhp) was more than the same shape RS4 (380bhp)

Once you get above insurance group 16/17 it may not be any cheaper than a group 20

Quick and fun do not have to go together.

That is very true, one of the best drives of my life was in a 1.1 MEtro down a country lane, thrashing it and going around corners flat out. Great fun, okay it took five minutes to get back up to speed when going through villages etc, but what fun that was!

My first quick car was at the age of 27 and was a Maserati Shamal. (about 325bhp twin turbo with a very short wheelbase for those that don't know. I'm sure most of you on here do.). Had it three years and span it 6 times....never hit anything thankfully but was straight into the deep end of performance motoring!!!Previously had owned utter s**t boxes. Ah, what fun.

agreed, someone else also pointed out define quick, acceleration comes second to handling in my book. But it depends on your definition!

When I was 19 I had a Mk1 MR2 and at 20 an integrale. Friends had a Capri 2.8, BMW 323 and Renault 5 GT Turbo (that became a 3 door Sierra Cosworth, but his parents wouldn't let him drive it until he passed IAM). That was 25 years ago.
