e34 540 calipers can be done with some adapter brackets, not sure about 535. Discs are a problem too cause the e34 is 5 stud and different pcd to the e30 - people generaly get audi or merc discs re-drilled instead IIRC.

Not heard about anyone transplanting the whole hub from e34 - only e36.

For more info on this I'd get along to www.e30zone.net

There's a technical area for help on this as well as a dedicated 'How To' area on Wikipedia (that you can access via www.e30zone.net

Why would you want to replace the e36 hub with an e30 one? You can use Compact (e36) rear trailing arms/hubs for a 5 stud conversion.

OP - pretty sure e34 stuff is no use on an e30. Brakes are fine on an e30 unless it's making big power etc? Production race cars just run braided lines, race fluid and uprated pads.
