Just found a nice big container of honey with comb in it in the back of the cupboard, but it has a useby date of 10/09/2008 on it. Pretty sure honey doesn't go off?

Not really. Bacteria cannot survive the sugar content.

I thought jam never went off until I became a student. Turns out it just doesn't go off when my mum is looking after it.

Nope.

I recently finished off a case of honey that my Dad collected from our hives in 1989.

Yep. As proved by every jar of honey I've bought for the kids in the last year or so irked
