I'm cooking a thai red curry and:

I think it will thicken quicker with the lid on

And

The missus thinks it will thicken quicker with the lid off.


What sayeth ph?

With the lid off the liquid will evaporate, with the lid on the liquid will drop back down into the pan.

I sayeth with the lid off - water (steam) can escape, whereas with a lid it will be recirculated into the pan, no?

Obviously with the lid off as the steam can then evaporate, the residual heat might be higher with the lid on though. Some sort of compromise maybe?

stick to the whisky, lefty - lid off = more evaporation = more reduction wink

t'was good anyway. And I'm now on the whisky - Balvenie 17 (Sherry Oak) and it's ace
