Mix 1 cup garam flour and a teaspoon or so of each cumin, coriander, chilli powder, cumin seeds and tumeric together in a bowl.
Add 5 tbsps or so of water so the resulting paste is a bit stickier than filler.
Add two large onions, one finely chopped, one sliced.
Bind together with hands, fry in deep fat fryer on a low heat for a longish time.
Alternatively fry the sliced onion and add it cooked to reduce the final cooking time.

level Tablespoon of Garam Marsala, Turmeric, Cumin and chilli powder to taste. 1 cup of flour.
2 large white onions sliced into fine lenghts.
Mix spices and flour in bowl with 1 egg and water to make a fairly goopy batter. leave to one side to settle.
Get oil hot and mix onion in small balls with batter.
Cook in batches to avoid oil cooling too much.

Get yourself over to Perth, there are some very superior curry places here....good god my mouth is watering thinking about them!!
I'm sure I could find some in Sydney as well, but up here it's your basic roadkill spec chicken in a watery and insipid sauce. But I've heard Perth curry's are amongst the best. Must be the the high percentage of poms over there
Maybe an opportunity for me in Newcastle then - crap indians there as well.
