So what sort of options are there for an automatic watch with a power reserve indicator and a viewing window in the back of the case? Budget of £3K.

Any other watches with nice viewing windows other than Oris/Tag?

Not really for me ... Well, maybe ... I need to save some cash though! hehe

I love the B&R 01-97 power reserve, but no viewing window, I'm afraid...

If you can find one second hand, these will just be in your budget.
A few of the JLC models fit your description (power reserve and exhibition case back)unfortunately thought most will be just out of your budget. There are lots of watches with exhibition case backs, the power reserve indicator is making a comeback so keep your eyes open.
If you browse the sales section of TZ you may find a watch that has both the case back and the reserve indicator.

Funnily enough I nearly referenced this one.

Looks great and if the OP wants a chrono, a great choice.

I love Zenith but that one posted above doesn't do much for me.

What about the Zenith Class Elite with power reserve and display back that might be worth a look?

Or the JLC Reserve de Marche - pretty sure that has a display back:
