Here's a new discovery: it's so simple and yet has made people exclaim: "This is wonderful!"
1 part light soy sauce.
1 part dark soy sauce
1 part Thai Fish sauce.
Mix with finely chopped or crushed garlic, and some chilli powder. Ground ginger optional.
Marinate the meat for several hours. I have done chicken and Guinea Fowl successfully.
BBQ spooning the marinate over regularly.
Mmmmmmm.

I guess you could probably add honey or sugar to create a sticky glaze too. Ever tried it Don?1 part light soy sauce.

For ribs I like a spice rub, normally consisting of
Salt
Pepper
Chilli powder
Smoked Paprika
Ground corriander
Ground Cumin
Cayene Pepper
Then the ribs go on the barbie at the end of the barbie away from the fire (i.e. not over direct heat). Then stick the lid on and roast them for as long as you've got, at least 4 hours. For the last half hour spoon over some home made bbq sauce (mines is tommy ketchup, brown sugar, tabasco and mustard) which will glaze them and make them nice and sticky. Serve them with more of the bbq sauce.
