Did my first Gold Track day yesterday at Silverstone. Very impressed, smaller numbers of cars, and people (in the main) sticking to the overtaking rules. As a novice trackday wise, that was a real help, on the other 5 days i've done there have been too many incidents of people overtaking through the corners and using the turning point as an opportunity to try and take you on the inside.
But I really did enjoy the Gold Track day and will be seeking them out as my preferred TD organiser.

You're right - I have driven and instructed on many track days but Gold Track is one of the few I would heartily recommend.
They usually let you have a few laps of instruction for free (it's safer that way with novices) but it's also well worth whiile paying to have at least 2 sessions. It hugely increases your learning of the circuit and of how your car handles.
