Following from a post about quick pie and mash...

Don't suppose you have pastry, leeks, and condensed chicken soup, do you? Quick pie and SP mash if you do...
I have pastry, leeks, condensed chicken soup.

Enlighten me. Although it sounds fairly straight forward, I'm just fishing for other recipes.

i used lemon thyme in the sauce which i was unsure about but it was delicious.

Sure! Plenty of variants, but basically that condensed chicken soup saves you making a roux, so you can do it start to finish in half an hour- i.e. do-able after work.

So,
wash, chop, and fry some leeks, place in pie dish
add chopped chicken (normally 2x left over breast from a roast, here)
add one can condensed chicken soup,
add one glass dry white wine and given it all a stir

Then roll out your (ready-made, in truth) pastry and either pop it on top of the pie filling or, slightly better, cook it on it's own shelf. 25 mins in the oven at 190°C (fan) while you make your mash. Serves about 4. yum

Chicken and mushroom also good.

Thanks people...

It turned out OK in my eyes, the pastry chef however made a complete enclosure as opposed to just a lid which I specified, can't grumble as she was volunteering.

Tasted bloody lovely though!

That is true, it wouldn't have been a true pie I guess.

However, I must admit too not being a big pastry fan. Unlike the wife who is and seeing as she was sorting it was only going to have one outcome.

Sure is...

I love sweetcorn. No idea why, but could probably survive a week or so on it alone.
