Hydro brakes - question

Quick one chaps.
I've just inspected my front brakes and one of the pads is shot. So shot in fact that the disc has been rubbing against the caliper - which is not a brilliant idea to be honest...
Caliper looks fine. My plan is therefore to replace the 160mm rotor with a 180mm one, and buy an adaptor to move the caliper out 10mm. I will also need a new set of pads, obviously.
So, recommendations for 180mm rotors (Shimano XT, Avid, other?) and a suitable adaptor for Shimano Deore LX hydro brakes.
Also, any suggestions for decent all purpose brake pads (the documentation says "M06 metal pads" but I can't work out which pads are M06. Are all the fitments the same, or do I need to be careful and get the right ones?)
