For the understated look get one that matches the colour of your shirt and fold it into a Flat fold - so it shows a thin line. If you want to be slightly more fancy get one that matches your tie. A pointed fold would look better with this - a double rather than a single as the single point makes you look a bit like a waiter in a fancy restaurant.
Edited to add: If you haven't worn one before make sure you're careful when you open up the breast pocket (as it will probably be stitched close).
