Bored of the usual stir fried chicken on a bed of creamy salad (well not bored but in the mood for something more rustic) I have concocted a little chicken dish tonight with an ingredient I have never used before.

I placed 2 skinless breasts in a tray and I have coated them with fresh garlic, pepper and italian herb seasoning. I have then wrapped each breast with fresh pancetta, covering them almost entirely. I have then added pepper to the tops and placed a little olive oil for them to sit on. I am intending, once cooked, to cover them in grated cheddar cheese and some chives, just to let it melt over the top. Served with rice and pea's.

Will report back later once eaten, first time I will have cooked this particular dish smile

Sounded great until the grated cheddar cheese; I doubt that will go well with the pancetta.

Anyways, best of luck, and do let us know. We've given up tonight and ordered Yo! so you are doing better than we are. thumbup

I do have parmesan cheese? I just fancied cheddar, havent had nay in ages!!!

50/50 Parmesan and breadcrumbs is a pretty reliable topping.

I'd say, try the cheddar, but I'd expect the combination to be a bit much (greasy and salty, IYSWIM). You can always scrape it off!

Hah!

I layered it with shavings of parmesan, part melted it and yes it was nice but I really fancied the cheddar. Mind you I was in a particularly cheesy mood tonight. I uploaded a pic and have popped a close up in the piccie thread.

Here seemingly starts a new forum for me to join in with wink

I'm 6'4", 16 stone and a greedy bugger and don't eat that much for me tea!

I seem to eat alot - 12 stone and have never changed weight for around 8 years. I often scoff chocolate and ice cream on top of that. I eat alot, it doesnt seem to go anywhere.

Handful of basil, couple of teaspoons of pine nuts, clove of garlic, bit of olive oil and good grind of black pepper, whizz up in a blender (or use a hand blender) is a nice homemade pesto. Stuff into chicken breasts, wrap in parma ham and chuck in oven until cooked. lick
