Quick question, when you purchase the seaweed / cabbage from the Chinese, what is the orange powder that you see sprinkled across the top??

I quite like that taste of it and might try it in/on other dishes but having wandered into a Chinese supermarket in Soho I realised I hadn't a clue what I was looking for.

Any ideas gratefully received!

It's only recently I found out it was actuall deep fried cabbage, I really did think it was proper seaweed paperbag

Only slightly off-topic, but if you ever see orange dried fish roe by the name of 'boutargue' (in French) or 'bottarga' (in Italian), get some.

It's heavenly grated over spaghetti accompanied by a glass of chilled rosé. View of the wild Corsican coastline optional.
