Chinese Twice Cooked Pork Recipe

Thought I'd share my favourite Chinese Belly Pork recipe as it's easy and delicious!
You will need:
A pack of pork belly strips (some fat, not too much)
A few cloves of garlic sliced
A small piece of ginger, peeled and chopped
A bunch of spring onions finely sliced
A couple of chilis finely sliced
A tablespoon of dark soy sauce
Two generous tablespoons of hoi sin sauce
A tablespoon of oil, preferably groundnut
Method:
De-rind the pork if necessary and slice into nice 2" pieces. Drop them into a pan of boiling salted water and simmer for an hour. Drain the pork and pat dry carefully. Heat your wok up nice and hot and swirl the oil round it before tossing in the pork. Stir fry it until all the pork fat has gone a nice crisp golden brown all over which should only take a minute or two and then throw in the garlic, ginger, onions, and chillis and stir for a further minute or two, then tip in the soy and hoi sin and stir fry until everything is evenly coated. You can now either stir in some cooked noodles and serve or tip out onto some rice. All done.
A doddle and tastes surprisingly authentic.

Rhodes around china is just about the most annoying thing on TV. He asks for a top chef's recipe and then goes "oh maybe ill just use a bit less pepper, wont it be nicer that way" or something similarly daft - when standing right in front of the fellow.
