Can an electric oil pump replace the standard on a wedge, has anyone tried this? If so how is it fitted and where can I acquire one?

Every oil pump on all cars is mechanical - even in dry sump cars. There are plenty of good reasons too.

Just stick with what works.

The drawback to running most electrical ancillaries (pumps, aircon, electric PAS etc) is that the added current drain poses an additional electromechanical load to the alternator, which is then effectively acting as a retarder to the engine... so you're wasting power turning the alternator! You may as well drive off the crank.

I'm sure one of the racers looked into it, and there is just not one powerful enough. some people do use electric pre-start primers and heaters. for minimum wear start-ups

I think the only thing that's worth having electric is PAS, as with crank driven, you have a small load all the time, with electric you only have load on use, so for straight line acceleration its better, also you can turn it off completely.
