Enchiladas?

The OH and I did enchiladas for the second time last night. We used a well known yellow, Mexican themed brands' Enchilada Kit.

I love them, can't believe I haven't been eating them for longer!! The OH likes them too, but after a while she finds them a bit too spicy. Now, I know we could just use a bit less of the spice mix when making the tomato sauce but that would be too simple smile

Does anyone have any tried and tested recipes before I go and scour the internet for our next attempt?!

I add some extra chopped up fresh chillis to the mix, but guess that's not the kind of suggestion you want.

I doctor the original kit too, its barely even warm on the scale as is!

I add dried crushed chillis, paprika, nandos sauce, ketchup and grated cheese to the mix yum

that looks like a decent sauce recipe, maybe drop the amount of chilli powder and add in some paprika/cayenne instead for flavour.

Just to set the record straight, I would like to make it spicier! The OH just happens to have a sensitive mouth it seems and being the nice guy that I am I'd like to make it more enjoyable for her!

I don't know why folk bother with ready-made mix. I just add chilli (to desired strength), garlic, other ingredients and a tin of chopped toms, heat for a bit then make up the enchilladas to go in the oven.

If the chilli gives an unexpected heat then add a dollop of natural yogurt to her plate, dip each forkful in yogurt to cool the heat.

I like this idea, unfortunately last night all we had was mayonnaise hehe

And she loves natural yoghurt, excellent suggestion. Thanks.

Just start making the OH eat more spicy food and her tolerance levels to spicy food will increase, maybe not to your standards but at least enough to be able to eat some enchiladas.

Make it yourself, really easy and much tastier smile

But for the OH buy some greek yoghurt (the 0% stuff is yummy) and she can use it to cool her serving - that's what we do smile

I add the chillis just to mine, doesn't have to be to the mix, so you can individualize the servings.

Mrs.S. didn't like spicy food when we first met, but a bit at a time she has become used to it and now goes for medium curries as the kormas are just too bland for her.

mushrooms, Cubed into the mix, and the addition of Lime zest at a late stage gives a nice kick.

I dont add chilli powder, rather the schwartz spicy cajun sizzle and stir spice.
