Foodie "Must Experiences" of Paris!

So,
I'm off to Paris next weekend, staying at a nice hotel on the champs elysees, and rather than do the obvious and dine at Le Meurice & Le Cinq, I wanted to try something more authentic, maybe even a little off the beaten path... sample those wondrous local gems that every big city has, but only those in the know ever know about. Budget is definitely secondary to the experience.
I'm staying Fri/Sat/Sun night, so would like to try and experience as much as possible (both culturally and foodie wise!)
Any first hand suggestions gratefully accepted.

Have a lunchtime Croque Monsieur in Fouquet's, just because you can.
"Le Gamin de Paris" is a little treasure, too. No booking when I've been, you just wait in the bar with free Kir. I think this is the one:

"Orestias" is Greek, but good, and the owner is so forward he practically drags you off the street:
