I had this at work today, basically its a veg dish to accompany the 1/2 chicken I had. I forgot to ask the chefs how it was done. Basically the ingredients were:

Red peppers
White onion
Courgettes
Aubergine
Garlic
herbs
olive oil

Is it just a case of chopping it chunky, putting it in a roasting dish chucking over some olive oil and herbs and slamming it the oven, but how long for and what herbs etc. I think there was some rosemary in it, fancy giving it a go with a small chicken, maybe do it in the same roasting dish?

Sounds like a simple dish of roasted veg to me..! Herbs and Moseary as you said.

Key is to pick veg that will cook at the same speeds, or you'll end up with a mush and solid mix..
You can cook the longer time ones for a while first.

I don't mind under cooking it and having it a bit crunchy. But how long to cook it for?

Rough chop..

Different sizes for softer veg to cook at the same time..

In a roasting pan, throw in the veg, sprinkle with Olive Oil / herbs mix together with fingers.

Cover with a Foil tent, so that they steam for the first part of cooking. - 25 mins
Remove the foil for the last 15 minutes.

Charred edges and juices together - MMmmmm

Try lots of other veg - Squash, butternut, Parsnip, courgette, aubergines etc..
