Project ideas - RV8 applications

I've been offered to buy back a rover V8 I put together last year (nothing exciting - just a 3.5 on SU carbs), which has left me toying with the idea of a new project.
The question is what?
So I'll have a 3.5V8 and an LT77 g/box, but what to put it in? This would purely be for fun, and wouldn't have to be road legal. So quite possibly some kind of buggy? Or maybe even a boat (the engine is currently fitted with a water-proofing kit but I've no idea how good)?
It would have to be a fairly straight forward conversion, but I'm welcoming all ideas.
