Shops that sell a range of knifes?

Im looking for a new chef's knife. Its all well and good looking up the best knifes on the interweb or just getting the one Ramsey uses but as with cars, I like to try before i buy.
Does anyone know any shops that allow you to try out various knifes? Im after the likes of Global or Gustav Emil Ern, not Tesco homeware collection.

For a big bloke I recommend German knives, for wimpy Dale Winton's then Japanese where you can use the extra sharpness to compensate for your lack of biceps.
Wusthoff all the way for me. And they have a better angle for point work.
