Whereabouts are you staying?
If you appreciate finer Indian establishments I would suggest Sachins at the top of Forth Banks. 5 mins in a cab from the Quayside. Pricey, but well worth it.
I've been going there when back home for decades.
Also a very good and non-chain Tapas place is El Coto on Leazes Park Rd. Very individual and run by a good friend of Mrs HH.
There are some very, very good places up there, it's not all pease pudding and/or black pudding!

All depends what your after.
Indians, Vujons or Rasa on the Quayside. I was in Sacchins 2 weeks ago and I have never been so disappointed in a meal. One of the meals tasted of tomato sauce and when I complaned and said this to the waiter he agreed but then went on to say thats what they had used?? Sharp exit
Cafe 21 is nice and is now behind the Law Courts on the Quayside just next to The Silk room which is ok too.
For Chinese food the Landmark is one of the better places on Stowel Street(Stowel Street has a load of Chinese restaurants and a couple of Japanese just off it).
Pan Haggerty on the Quayside is nice too.
Six at the top of the Baltic art gallery is nice, with good view of Newcastle.
For Italian food we usually go to Secco on Pilgram Street.
You may have noted that I have not said any of the restaurants are excellent, as I can honestly say it has been ages since I have been able to say I've had a really good meal in Newcastle. Nice yes.
Maybe I go out to often, well my wife thinks I do.
