Tyre Size ?

I have no idea how thin a tyre I can go ?

I think I currently have 26 x 1.75 and was wondering what is the thinest tyre I could get on my rim ?

The Bike is a Cheapie £350 halfords carrera subway hybrid bike.

Ideally I want to go 1.25's but would this be too thin for the rims ?

Depends how thin the rim width is (it may be engraved or on a sticker on the rim), current tyre size will be on the sidewall of your tyre. I wouldn't go thinner than the rim width.
