Hello Food Department byebye

I have decided to cook something for the other half on the weekend and I am really stuck for ideas confused. So what can I cook?

What we like?
- Any meat apart from Lamb
- Resonably spicy (In curry terms nothing hotter than a Jalfrezi)
- Nothing to fancy just good nice food.


My cooking skills are resonable after working as a waiter (even though I spent most in the kitchen as the chef was a tool)

So what can you come up with that I can cook?

If you want a bit of a kick and different from a curry try some good Mexican food (not tex-mex), tortillias (no cheese unless Panela or similar) with slow cooked pork (preferably smoked if you can), make sure you make not buy corn tortillas and buy some fresh chillies. Serve with pico de gallo and refried beans.

I've done this Chicken & Chorizo Paella a couple of times... Extremely tasty and pretty easy to throw together - I've failed to cock it up yet! biggrin

Slate,

Duck Thai Red Curry.

Fry off a couple of Duck Breasts, skin-on until nicely browned, still a bit pink in the middle. -Set aside.

Put some oil in a pan and fry some red Thai curry paste (amazing stuff if made by yourself, but ready-made supermarket ones are getting better and better) add a tin of coconut milk, some pineapple chunks and a couple of handfuls of cherry tomatoes. Simmer down for a few minutes, then slice up the Duck and add it, simmering for a couple of mins.

Serve with some simple Thai rice.

-Feck its good.

My take on the beef wellington.

Ontop of a square of filo pastry.

chopped onions, mushrooms and a red chilli, fried till soft and used as a base to put the steak on.

coat some steak, (Doesn't matter on cut, but I prefer the shape of fillet) in crushed chilli flakes and crushed peppercorns, then flash fry to seal the edges.

place steak on onion mushroom mix, some corse Pate on top of steak

Fold over the pastry to create an airtight parcel.

cook. hot oven for 30-40 mins.

serve with steamed veg and tatties.

If its for a weekend you really can't beat a traditional roast. Joint of beef, garlic and rosemary roast potatoes, roast parsnips, roast sweet potato, roast garlic, yorkshire puds, fresh steamed veg, proper gravy, nice bottle of red wine...

Right that's my Sunday sorted then.

you dont like lamb? thats such a shame, its the best meat you know. all IMO off course.
