No, not Max Mosley's bedroom but my engine bay. Is it ok to use a biodegradable degreaser to clean these up, or am I going to end up with biodegraded hoses and coolant and oil all over the garage floor? If not, what else is recommended?

A citrus degreaser should be fine, if used diluted. Always rinse after, too. These will be better than using the harsh solvent type products.

In lieu of citrus-based ones, Bilt Hamber Surfex HD is ideal for such tasks.
