More than likely it'll be Brighton as you'll route round the western edge of London around Maidenhead and Henley (passing above and west the outbound Heathrow traffic).
Around Ascot / Camberley you'll get turned onto a south easterley heading which will take you over the southern coastline pretty much around Brighton depending on air traffic. Left hand side you'll be able to see along the coast towards Seaford, Beachy Head, Eastbourne, Bexhill and Hastings . . .
French routing is normally west of Paris then down the centre of the country passing Chateroux, Toulouse, over the Pyrenees after which you commence your descent into Barcelona. If you're on the right side of the aircraft and landing on the south-easterly runway, you may catch a glimpse of the Catalunya Circuit . . . !

Was heading to Spain earlier in the year.
Checked the “no frills” airlines…
Flight
Tax
Check-in, extra
Baggage, extra
Come back with the same bags, extra
More legroom, extra
Priority boarding, extra
In flight nibbles, extra
Pay by debit card, extra
Compared price to proper carrier.
Booked with proper carrier and saved £98.

We're flying Stansted to Barcelona with Easyjet next week for the total sum (card fees, hold baggage etc.) of 60 quid each... Happy with that, having checked the prices of all the other popular airlines - expected to pay more and put the 'savings' towards a accomodation of a standard we wouldn't have been able to afford otherwise at the moment - happy days!

We even managed to get the front seats without Speedy Boarding... Life of bloomin' luxury, I can tell ya Guv'.
On a recent flight from Malaga I hadn't sorted out speedy boarding - resigned myself to being surrounded by screaming children, however soon realised we were being bussed to the plane - managed to get near the bus doors then sneak around to the back steps (which nobody realised you could use) and had my pick of seats! Thought you might be interested in these, taken on a Ryanair Flight from Barcelona Girona to Stansted in September 2005.
This is over central France, I believe this is the River Gironde at sunset.

This is on the way to Valencia in January 2007, taken in the early morning over the Pyrinees.
