Erratic oil pressure and coolant temp gauges

Both have been a bit bonkers lately since my TH works cam and head job, gonna get Tom to have a look but though i'd get a head start!
Coolant temp will sometimes read about 5-10 deg too high and sometimes 20 too low. I know this is the case as the fans always come on as they should, but the temp gauge shows 70 instead of just below 90, it also will sometimes rectify itself back to 88-90 far too quickly to be actually changing those temps. Personally i'd say it sounds like an earth or connection failure - anyone had anything similar?
Oil pressure gauge is also doing something similar sometimes reads too low, like about 3 psi! when I know the everything is in good order - fresh oil, oil pressure light good, clear oil ways from recent TH rebuild - then suddenly it will jump back up to where it should be, again this is intermittent and feels like connection problems although I have cleaned and changed the spade connector? Obviously the car is not really low on oil pressure as the light never illuminates, even when it drops to just above 0 on the pressure gauge?
Its a 98 500, any ideas guys?

My oil pressure guage was reading strange readings,when I checked the cable to it, it had become hard and brittle due to heat from the exhaust.So I cut the cable back found some slack and re-connected it with a new terminal.My Griff is a Pre-Cat so I do not know if yours will be the same.
