Cold starting at present is prooving a little challenging, it starts fine but if I try to throttle up she damn near stalls and is a real struggle to get any usable revs.
And once she's settled down, she dogedly holds the revs at 1200-1300rpm until coming to a complete stop. Normally I'd put this down to an over-enthusiastic ECU assuming that its cold, but the engine tempreture is well above 70 and she still does it.
Am I over sensitive or could I be looking at an issue here?

I'd agree with the air leak possibility, any air dragged in post MAF meter isn't 'seen' by the ECU and so not compensated for, causing rough running.
Check the hose clips for tightness and inspect the trunking for any cracks or splits and also all the vacuum system, the small bore pipes and fittings for cracks and missing parts.
The best way to locate a leak is to have the engine running and warm and then spray lighter gas around each joint in turn. If the engine rev's up you've found your leak.

Check the vac pipe from the back of the plenum to the fuel reg is in one piece and still connected. I've seen several popped off whilst folks have been pi55ing about with stepper motors, and they are not as easy to see as when in Landy engine bays 
You'd be surprised how many cars have had idle adjustment servicing/tinkering to 'overcome' basic faults like these...
