what am i allowed to take on a edinburgh to norwich plane?

Not really up to the airline, it's what security will let you through with. And while Edinburgh has one of the better security set-ups (yes, honest) it's down to the bloke/lass on the x-ray machine picking it out. If they deem it to be 'offensive' or 'dangerous' then no; but given they let metal pens through, and fold-up umbrellas (sometimes) there shouldn't be a problem. You should be fine though...but it really depends if the folks on security are feeling pi$$ed off or not.
Does it come apart? Would be far better just taking the bits through that way maybe? I tend to travel with just hand luggage (twice weekly out of Edinburgh) and what they ask to see is real variable. I'm always carrying 2 laptops, a projector, mouse, spare batteries, power supplies, power leads...and an MP3 player and a SatNav Obviously the laptops come out, but sometimes they stop the bag and want all the rest of the gubbins out, other times (and mostly, in fact) it sails through.
Worst case (and assuming there's some value) is to go back down to check-in and get it put in the hold. Edinburgh are OK if you ask to get out of security and go back to checkin.
Plan B - put some tobacco in it and call it your pipe.
Plan C - learn to play a tune on it and claim it's a new fangled flute
