I'm starting to plan a road trip across the US, Canada and Mexico in a Mini (original) that I will ship out myself next year. I love track driving and I love the track Laguna Seca as it looks like a great challenge, but I have not been able to find any details of trackdays for cars there.

Does anyone know any places that offer track days for cars at Laguna Seca so I can include it in my trip?

IIRC, the Americans have track car clubs. These clubs book the track for closed to member sessions. That's probably why your not getting a lot of publicity about them.

Have a look at a few car club forums in California, and see if they can help you.

The track itself may have a web site. If so, it will have a calendar or a schedule of events that list the clubs and type of club, plus web contact info for the various clubs.
Ask the clubs you find what type of drivers licenses they accept.

Insurance, you may want to check into before you leave the UK.

The Skip Barber school is based there and they can certainly sort out instruction or pax laps as I found out when I dropped in recently - I'd give them a call and ask about days where you can take your own car and how they are organised.

great circuit - get a pro to take you round - its a real roller coaster !

As mentioned above, things are based more around car clubs than TDO's.
I joined the BMWCCA (regardless of not having a bimmer) so I could go on their High Performance Driving Schools, which are essentially sessioned track days divided into Novice/Intermediate/Advanced groups. You should be able to get onto Laguna via these folks:

Regional chapters of Audi, Porsche, Alfa clubs of America could also be places to look.
