Stuck for an evening meal the other night, and having odds and sods to use up, I thought a couple of nice individual pies for me and the missus were in order. Quick web search later and a bit of making-it-up-as-you-go, I arrived at leek, potato and stilton as being the future!

Found a slightly limp leek at the bottom of the fridge, softened it with a whole onion, and added chicken stock, plenty of pepper and some flour to thicken. Sliced and parboiled some spuds.

In the freezer has been lying a mountain of cheeses left over from our wedding (cheese stack, in lieu of cake) in August...2008. So, crumbled a big wedge of stilton (it loses its creaminess when frozen and defrosted) threw a little grated parmesan in, and layered all the ingredients in a couple of deep pie dishes. A cover of ready-rolled puff was trimmed, and 30 mins in the oven. Have to say, I was rather impressed with the results...a little more cheese next time, perhaps.

SOOOoooo....any quick and dirty pie recipes to share, that might be ideal for using up store cupboard scraps?

Assuming you're not a vegetablist, get a bit of bacon in there next time too. yum

Random cupboard food is great and a really good way to discover new meals by forcably restricting your choice of ingredients...

We've normally leftover chicken in the freezer and the odd leek- add a tin of condensed chicken soup and some pastry and you've a very quick Chicken and Leek pie.

I'm going to be controversial here and say is anything with a bit of pastry on the top actually a pie? A pie should have pastry on all sides, as I learnt to my cost and 145 attempts when going for one of the cooking competitions.

Not controversial at all, wrong but not controversial wink Shepherd's pie, cottage pie, fish pie... all without a pastry base yet all indisputably pies in my book and also according to my understanding of the English language. smile

I'm not, SWMBO sadly is. I am working on a cure, with partial success (white fish, boneless/skinless chicken)...building up to unleashing a bacon sarnie on her. Wish me luck.

Half of yours have not even got pastry as a topping ! Do you consider a moussaka as a pie then? Just coz it's got pie in the name doesn't mean it it one.

Is a moussaka a pie, yes or no and if it is what is your definition of pie? To me fish pie is not a pie, it's just a name for a thick fish stew topped with mash.

A pie is something that can be taken down a coal mine from the 1800's onwards and eaten with the fingers without aid of a spoon. In Cornwall they did same with a pastie down tin mines.

You've been turned by aliens I'm afraid, or even worse, foreign folk. eek

You said quick and dirty! You could make a roux from some stock if you wanted, but the condensed soup works very well and it isn't floury. A splash of white wine is nice, too.

Mashed potato on top of stuff doesn't make it a pie, it just doesn't, surely your understanding of the English language extends to accepting that lots of things are called things that they aren't actually.

A pie has a filling and a case. The case is made of pastry. zakelwe was as you say not controversial at all just correct.

I'm quite happy to call anything topped with mash a pie, but it's only a moniker, common usage and parlance, that's all. I know it's not really a pie. Just like cottage pie isn't made from a quaint dwelling, and it's not even a pie either.

Look up pie in the dictionary, not sure if you're foreign but I'm sure you'll get the hang of it. Pie, Shepherds Pie, Fish Pie all=Pie. I won't spell it out for you as it'll take away the excitement of enlightenment.

Cambells chicken soup thrown into a sauce is ace. Try it.
