Its called Binaural recording - Must be listened to through stereo headphones to have the full effect.

I did a big thing on this at Uni, you can produce some pretty interesting stuff with the right mic setup

ETA have a search for 'Binaural recording' on youtube, I seem to remember there being a few good examples.
