I'm planning to stick a TV in the gym we're building. How can I watch things I've recorded on Sky+, in the gym? Is there an easy way to copy from the Sky+ box and play on another device? Or a method to stream programmes wirelessly to the other device?

The gym is in a different building - approx 14ft away from the house. I could run a cable if I had to but with two granite walls to penetrate and a driveway to tunnel under, I'd rather not!

I did exactly the same. Ran satellite quality coax from the Sky box out through the wall of the house, around the house, along a fence/wall and into my gym above my garage. Total distance approx 25 metres. Activating the signal on RF2 allows me to operate the Sky box from the gym - but you will need a magic eye and a second remote. Signal quality is fine, and it has been working without any problems for almost 9 years now.

In Summary, and IIRC, you have two RF outputs on your Sky+ box. Through an easily Googleable secret sub menu you can activate a 12v feed in the RF Output.
Google : Sky + RF Output 12v feed , or similar. if stuck I shall look for you.

Anyway, then go buy a simple Coax signal Amplifier / Splitter. Mine is mains powered, the feed from the RF Output goes to the Amp / Splitter. From there three Cables out -
My set up, has one in the bedroom, back room and Kitchen.
At the end of each coax in the above rooms, I have a Magic Eye do-dad and Remote.

Tune in the 'remote' tv to have Channel that picks up the Sky feed. (i.e as a terrestrial signal not an AV/Scart)

Bob is an uncle, Fanny is an Aunt etc.

All in no need for Sky MultiRoom or whatever, and material costs of about £60, and works bloody well.
(no good if you want to watch two different Sky feeds in two separate rooms mind.)

Although I don’t think they like thick walls and long distances very much.
That does look interesting...however there's at least 4ft of granite between the two spaces...I think I'd need at least one external aerial...

Using the RF2 output of a Skybox will mean you only get mono sound at the remote location(s).

Something perhaps to consider.

There are HD baluns out there, both Component and HDMI.

I'm looking for one that does sound, HD and has the infra red receiver/transmitter for the remote, no luck with google so far, but if you know of one?

Can do HDMI (Sound and Video) with IR, HDMI + Optical with IR, Component + Stereo with IR.

Are you limited to a single physical Cat5e run?

probably not, as I could use a homeplug and a switch? I do have one hardwired, but I'd rather keep that exclusive to my music server

Homeplug not really an option.

Most baluns just use the conductors rather than packet switched traffic. Due to the number of pins most baluns need two Cat5s for HDMI though Component and Stereo with IR can be done over one. There are HDMI baluns that can do it over 1 Cat5e however.

There is however a HDMI over IP using packet switched data that has recently been launched, I'd struggle to recommend it's use over Powerline though.

ah .. I use the letsautomate ones at another house in which I hardwired the cat5 .. I was about to get them for here and use homeplugs, but it looks like I would be wasting my money!
