I always put the bones/carcas in a freezer bag and save them up till I have 4 or 5 and make a good stock! made a batch of chicken, guinea, duck and pheasant stock! and is lovely!
I already have some (chicken and rabbit IIRC) in the freezer.Don said:

How many? They look a bit small. Unlike a Guinea Fowl - which is not much smaller than a chicken!I have had Coot before too! but I had 6! I fried up the breasts in butter and served them with mash and homemade gravy! mmm
