it started with this



part of which now looks like this



which will be going in the oven in about 5 hours

now i just need to decide what to do with the other 25kg of meat

If you are making Bambi Burgers, add some fatty lamb to the mix because the venison is too lean on its own.

i have 1.4kg of pig fat in the fridge waiting for the sausage making to happen this weekend - although i need to go to the butchers and get about the same amount again. I find 20-25% fat is about right

try the lamb,i find the meats compliment each other nicely

thermometers take ALL the skill out of roasting thumbup



so you can take it out of the oven for resting at just the right time



make the gravy, put the satsumaimo through the ricer, cook the leeks, and...

That venison looks superb!

Did you do all the butchering yourself? You must have a huge freezer...

yes I do it myself.

my freezer is tiny - if it were entirely empty I might just about be able to fit this animal in it. I never shoot this species of deer because they are too big for me to deal with easily. At the moment it is jointed, and these joints are hanging in my game fridge in the garage. Most of the meat will go into sausages, and a lot of them will have to be given away.

I haven't seen this one, but you can get similar (if less stylish) ones here. Roasting anything without one is like driving with your eyes closed!

Can you not preserve some. Not sure if you can do venison jerky.

could do, but giving it away is good as I get thinks like lambs and chickens back in return!
