Things to do in Las Vegas

I will be going to Las Vegas in two weeks. I've looked at the attractions and museums, wildlife and things like that don't get my interest. The only thing I found interesting is the gun store where you can try out guns on aiming targets.
Being someone who isn't into nightlife, but into cars (I've done go karting loads of times so it's not that fun anymore, and I've seen the car museum attractions in LV on the net but looking at fast cars, espcially when the area I work in/worked in last, had and has plenty of fast cars), what is there to do which will interest me?

You can rent some pretty nice cars and drive out to the Hoover Dam for example, nice mix of roads.
Helicopter trip to the Grand Canyon is nice.
If your not into the nightlife it does restrict somewhat what you can do as it is mostly geared up for the casino's. but you can do a lot of shopping and you have the out of town retail parks as well.

1) Rent Corvette (or anything else that takes your fancy)
2) Drive to desert (or road on north shore of Lake Mead towards Valley of Fire)
3) Rag car mercilessly
Also, you can rent powerboats on Lake Mead; go to the marina that's just off the road to hoover dam. You can take the boats fairly close to the dam at one end of the lake, and scoot down the top (wide) part of the colordao river for a little way at the other end - plus pull up on to a beach and have a picnic etc....
There's also NASCAR driving experiences at the Las Vegas speedway. And I gather you can visit the Shelby factory...but I haven't done that one yet.

The problem with renting a car like a Corvette is that they are 2 seaters, and there is 3 of us lol (me and my parents). Even I rented a 4 door car, like an M5 or one of those 4 door Maseratis, the driving age is 24 according to my dad (or 25 according to the net). Either way, I am 23, and my birthday is several months after this trip.
The nascar thing sounds good.

i was in vegas early october, what a place. stayed in the bellagio and went to the gun store, fired a 9mm pistol, a desert eagle, an m4, and the m249saw and got the t-shirt. amazing fun.
spent most of my time oggling fake tits, smoking everywhere and propping up the roulette tables whilst being brought drinks and being a real player in caesers palace. lovely food everywhere but not cheap.
dont worry about things to do its a senses overload just wandering through all the casinos. just go with lots of money and make sure you go to the gun store.

Ignoring the age thing, assuming you get someone else to drive then a Mustang will seat 4...so long as whoever's in the back is real small. If your mother's a midget this would be an ideal solution 

Can't see the appeal of the gun thing myself...been going to Vegas every summer for a few years now and never felt the urge to handle a gun, but whatever floats your boat. There's also skydiving locally - tandem out a plane and also on the ground in some big fan contraption.
And you should treat your folks to front-row seats at Zumanity. A great show, and they'll love it.

go and hold the cold steel and smell the gunpowder and maybe you will see and feel the appeal. but then by your own admission you are a grumpy old man so maybe its not so appealing in old age. 
seeing shows is for kids and old people, there are plenty of more entertaining things to do.
sorry if i sound a bit offensive, after reading it back myself then perhaps. its meant a bit tongue in cheek.

I went last year and although thinking it could be a bit tacky and not my kind of thing it was probably one of the best holidays I've ever had. For me the highlights were:
1. The rdes on top of the Stratosphere. You have to do this, have a look at youtube.
2. NASCAR driving. The usual safety stuff, really enjoyed the hot lap next to a proper driver. Despite the speed, the bladder rumbling sound and sheer thrill, it was the levels of grip going into the 'corners' that really suprised me. Driving them was great fun, well worth a try. I think Tiff Needell did a similar thing once, also on youtube.
3. Gambling, not my thing but most hotels will do a free guide during the morning hours if you need a bit of a brush up. Well worth having a go, if only for the free drinks!
4. The food, loved it. In the right places comparable to most renowned London eateries.
5. Ask for an upgrade. On our first morning I complained of noise in the night, they were building a display in the hotel. It really was not a problem but thought I'd have a go for a free bottle of wine! We ended up getting an upgrade that minute into what can only be described as a penthouse apartmnet! Well worth a go.
6. Book Limo transfers, Pikey, Chavey, Scummy as hell when in the UK. But when in Vegas it's the norm and quite cheap. Also a great way to get to your hotel and start the holiday. Also a nice way to get back to the airport when you've lost your shirt.

One thing to check if renting an exotic car in vegas, some of the companies disconnect the aircon because the cars mostly crawl up and down the strip and they dont want them overheating.
Best to check this, we had a viper with this issue and had to take it back as unusable in 100+ temperatures
