I am on an oilrig in the caspian right now and every day in our office we get a plate of biscuits or cakes, we also get a small bowl of fruit, apple, banana, orange and recently there has been a persimmon.

A couple of days ago I decided to have a persimmon - the biscuits must have been finished wink - I only ate the fleshy bit inside and it was quite good, not unlike a mango.

So yesterday I decided to have another, cut it in half then sliced off a bit of the inside fleshy bit, when I put it in my mouth it was like something had removed all moisture from inside my mouth and was trying to drian the rest of my body.

WTF is it with that fruit ? One tasted nice, the next one I ate tried to desicatte me !

Wild guess - the first one was ripe, but the second unripe and still had a high level of tannins/astringents etc? Or maybe a decorative variety instead of an edible variety?

Could be, they both felt roughly the same(ish) I have just never eaten anything which had that effect before.

I don't think I will be eating one again in a hurry.

I'm a big fan of persimmons, which are pretty common here in NZ. There's a fine line between "unripe," "perfectly ripe" and "mush." Colour is quite a good indication: you're looking for a nice deep orange colour, but you don't want the fruit to be too soft - it should still be quite firm.
