Cross-channel ferries in December?

We do that crossing every December, and a lot more frequently - going to our house in Sarthe.
Never had a bad crossing in the past 3 years. Most of the time, it's been flat as a millpond. We've been lucky enough to cross during spells of high pressure.
The large ferries that ply this route have stabilisers, so I've been very comfortable even on a force 5/6 crossing.
Of course, there is the risk that an Atlantic storm can swoosh in, and then it's all hands on buckets.
Make sure you have a cabin with a bathroom - it gets a bit smelly and crowded on a really rough crossing in the public ones
