...and you can see/feel little flicks of saliva spitting from his/her mouth...
You've only just met this person and that little flick of spit that landed on your shoulder is just the beginning. With each short sentence, he/she is getting nearer; one has just landed on your hand (the one that you're holding your coffee/drink with) and as the converation picks up pace, so does the frequency of these droplets from this oral shower-head.
You've just felt one land on the side of your neck... and it's only a matter of time before you're about to have some of his/her saliva land on your face....
How do you deal with this situation... what do you do?

I suddenly became aware of this when I was talking to a man at a seminar. Place was packed and you just had to stand close in order to hear what each other was saying.
This bloke was an insurance broker and (and potentially a good contact for me) when all of a sudden, I could feel may face becoming in range of his showering mouth. This made me feel a bit on edge and every time he started a new sentence I would turn my head as if someone had just tapped my shoulder.
It just makes the whole thing very uncomforable because I thought that he must know, or can see he's doing it. As soon as it gets mentioned, the apologies and 'it's ok' start. I'd rather not be in that position because there arent many who will appreciate my directness in these situations.
