'Eager' was the name of a famous performing beaver in a circus in the 1900's.
I remember reading somewhere that he was one of the first 'tame' beavers and used to jump over barrels and climb see-saws with quite a lot of enthusiasm.
His trainer took to calling him 'Eager' and the name stuck.
Due to the rarity of seeing a beaver act in this way, he became quite famous and the term 'Eager beaver' developed from that.

The phrase 'as keen as mustard' is known from 1672, the century before the company was formed in 1742. The caption on the accompanying image is probably too small to read online, but says [Keen's Mustard] "First manufactured in the reign of George 2nd AD 1742."

keen in that sense is probably akin to the "cutting/sharp" meaning...like keeping a swords blade "keen"

To be fair, it's not really a descriptive phrase like the others. It's about turkeys voting for christmas if you need to know smile

I'm confused at what you're saying...the site you lifted that from says Keens Mustard isn't the origin of the phrase.
