I've tryed the old cheese and ham etc.

But what else can I attempt?

What you do is-
1. Dorito cool nachos
2. BAM some of Daves Gourmet Insanity Sauce on there
3. whack a layer of shredded cheese ontop
4. lay a pile of jalepinos and salsa over that layer
5. BAM some more cheese ontop
6. Slam it in the oven, let it melt
7. Get your snack on

You'll need

couple of bags of doritos (lightly salted or cool) You'll use more than you think should.
1 jar of hot salsa
1 jar of jalapenos
250g grated cheese (I use cheddar, but you could use anything really)
1 tin chilli (Stagg, or whatever)
guacamole and/or sour cream
Big, deep ovenproof dish.

Warm the chilli up in the microwave for a couple of minutes first.

Then layer nachos, chilli, salsa, jalapenos, and cheese. Leave some cheese for the top.

10 minutes in oven at 200c.

Serve in big lumps with guacamole and/or sour cream and some napkins. Can be quite sloppy, but always tastes good.

One transylvanian restaurant I visited recently had nachos and icecream on the dessert menu.

I believe that qualifies as 'interesting'.

How apt, the other half is just cooking some nachos in the oven now. We are having them with crated cheese, salsa and sour cream.

nachos spread over with refried beans, cheese, spring onions, then grill.

Pour over some chilli made with quorn mince, onions, tinned toms, mexican mixed beans, garlis, kidney beans, chilli powder, cumin.

top with grated cheese and lettuce

side dish of salsa, soured cream, guacamole

any combination of the above
