how do you make decent Bubble & Squeak

Soften some onions in butter, fry some lardons. Mash potato and chop larger bits of veg. Mix, squish into cakes and fry, or if doing a lot a squish into baking tray and stick in the oven for 1/2 hour.

According to Jamie Oliver - it needs to be at least 50% potato to hold together properly but apart from that, add what you want. Make sure you season it adequately, assuming it's constituents haven't already been so (leading to over-seasoning). Cook in a mixture of olive oil and butter to get a nice cripsy outside bit.
