Normally I get a barman in for our New Year's eve party but decided this year to do it ourselves. So what are the favoured cocktails of PH and also, a link to any good websites, there are so many around, I don't know where to start.

both of these can be made in bulk, i.e. not individually shaken. The trick of making manhattans in a cafetiere works really really well - they come out perfect. Alternatively you can just use a large jug - just gently stir the mixture with ice with a bar spoon to chill it down, then strain as you pour into ice-cold martini glasses.

For the Mojito, mix the lime, sugar, whisky and mint in a jug and keep covered in the fridge. If you leave it for 6+ hours the flavour of the mint will absorb into the liquid, so you wont need to muddle it. Then just pour into highballs, top with ice and ginger beer.

You can also use Simple syrup (sugar syrup) in place of powdered sugar for a smoother tasting drink. I got some at Waitrose.

its a twist on the original recipe - just like we do a whisky Mule, which is usually a vodka drink (Moscow Mule).

it actually works very well indeed. the ginger beer makes it quite different to a standard mojito, but the essential flavour (lime, mint) is there.

Espresso martini:

2 parts vanilla vodka
1 part Kahlua
1 part espresso (very short)

Shake with ice and strain into a glass.

A really good one of these gives a rush that starts at your feet and works its way up.

2 measures Lemon Juice
1 measure Maple Syrup

Crushed Ice

Shake

Pour into Martini Glass - 1/2 way

Top with Champagne

1 measure Orange Juice
1 measure Cream of Coconut

Shake all ingredients with ice and stain into a glass filled with fresh ice.

Garnish with a dash, or three, of nutmeg.

Big fan of a Bramble or a Bramble made with Sloe Gin - which is like a Hedgerow Sling but not quite.

Indeed. We've tried, and failed, on so many occasions to make a proper mojito, despite following recipes religiously and using all the right quantities and ingredients.
