About two and a half to three weeks although towards the end I wrap the slices in cling film and heat in the microwave or chuck on a tray with some water and wrap with foil and put in the aga to kill any beasties.
I might get shot down by the H&S crew, but the old man was a butcher and we used to eat meat green with mould so you might be speaking to the wrong person. Never been ill with it to date ! Although normally gone within a week as it is sooo tastey. My favourite.
